Carrot Capsicum fry

It’s for BM#27 week 2 Day 2 Under Traditional Theme im posting this recipe… often My Mom and MLW make this fry.. It goes well with any type of curry… It’s simple and easy when you are run out of time…. same type of preparation can be make with all types of vege… can try this with mixed vege too…
Ingredients:
Carrot – 1 cup grated
Capsicum -1/2 cup chopped
Onion- 1 finely chopped
Green chillie- 1 nos
Coconut- 2 tsp grated
Salt
Oil- 2 tsp
Tempering
Mustard- 1 tsp
Urad dhal- 1 tsp
Channa dhal- 1 tsp
Jeera- 1 tsp
Curry leaves
Heat the kadai with oil and the tempering items one by one
Saute the onions, green chillies, and curry leaves
Add the chopped capsicum and grated carrots
Add 1/ 2cup of water and cook them till done.. let the water dries up
Add the grated coconut

Love these kind of simple, homely curries. I usually go with either onion or coconut but somehow never use both. 🙂

We usually combine carrot with beans or cabbage. This is a new, but a nice combination!
