Bhinda Bataka(Okra and Potato Curry)

This i Got from a Gujarathi recipe book… tastes yum with Roti….


Ladies Finger/Oakra/Bhindi- 500 gms
Oil- ½ cup
Onion- 1 Chopped
Mustard- 1 tsp
Fenugreek seeds/ methi seeds/ venthayam- ½ tsp
Chilli powder- 1 tsp
Turmeric powder- ½ tsp
Coriander Powder- 1 tsp
Cumin powder- ½ tsp
Ginger and Garlic masala- 2 tsp
Curd- 2tsp
 *         * Wash the Ladies finger, Cut off and
discard both ends, Slice ito ½” Rounds and set aside
·      *  Peel potatoes, Cube them into ¼” slices
and set aside
Grab the ingredients
Heat the oil, add the mustard and fenugreek
seeds.. Saute the Onion & Fry the Ginger and Garlic
Fry the Potato cubes
Add the Chillie powder, Turmeric powder,
Coriander powder, Cumin Powder, Salt Stir to mix well

Add the Oakra, Cook Covered on moderate heat for about
20 mins stirring every 3 mins. It may be a little gluey at first
Add the curd & Cook for further 5 mins uncovered. Cook
till curry is Dry…
Aloo Bindhi fry is ready…
