Beans Mezhukkupuratti/Stir fried beans in Kerala style, i learnt this dish from my aunt, who taught me about cooking.. there is no words to explain this simple Side Dish.
It has a wonderful flavor with Onions and Garlic.. and the Coconut oil is the secret behind the taste.. most of the Kerala dishes are prepared with Coconut oil only, that’s why they stay a good quality in taste… we had this curry Kathirikai Theyal, simple comfort curry its.. Love to have beans in any form this is one of the best preparation, i can have this bowl of beans without rice.. Lets see the Recipe first and do try and let me know how it turns for you…

Preparation time- 15 mins
Cooking Time-  20 mins
Serves- 4


Ingredients:
Beans- 1/4kg
Salt- as per taste

To grind:
Shallots/Pearl Onion/Sambar Onion- 6-7 nos
Garlic -4 pods
Red chillie- 3 nos
Turmeric Powder- 1/4 tsp

To Temper:
Coconut Oil- 2 tsp
Mustard- 1/2 tsp
Curry leaves- 1 spring


Method:

* Wash beans in Running water, de-fiber the beans by removing both the ends..

* Cut them into pieces, Add 1/2 cup of water and salt along with the chopped beans.. cook this by cover ti with a proper lid for 5 mins in medium flame..

* Now take all the ingredients to grind in mixer {Onion/Shallots, Garlic, Red chillie, Turmeric powder} coarsely grind them to a paste.

* Here its the boiled beans, no need to cook till the water dries up… Heat a pan with Coconut oil..
* Temper it with the mustard and add in the grind-ed paste and curry leaves, cook till the raw smell goes, now add the boiled beans along with the stock..

* Cover and cook till they stir fry the beans with masala..  check for salt in this stage.. cook them in low- medium flame..

Note:
* Coconut oil is preferable for exact taste… im not sure with other oil..
* Can use some grated coconuts in the last stage..

All done.
