Cucumber Sambar.. Cucumber Cooked with spiced dhal… sambar is on the south indian special curry.. spicy, tangy, delicious sambar combine with all kind of veg thooran, and Steamed rice..
Sambar can be prepared with all vegetables.. mostly cucumber used in salads and preparing a main dish with cucumber is very rare… cucumber has lot of health benefits, its a water sacked vegetable… easy for digestion too.. i served this this cucumber sambar with Cabbage thooran and steamed rice.. Lets go with the recipe first..

Preparation time- 20 mins
Cooking Time- 25 mins
Serves- 4-5


Preparation with step by step Picture Instruction:

* Boil the Thoor dhal with a handful of pearl onion, Hing and few garlic pods.. pressure cook it for 3-4 whistles and mash them well and set aside, Cube the cucumber and medium sized onion.. boil it with 2 cups of water with some salt..

* Add one chopped tomato and 2 tsp of tamarind water to the pan.. allow this to boil for few mins, then add in the Ready made or home made Sambar powder and Turmeric powder to the pan..


* Once the Cucumber cooked well add in the Mashed dhal and cook this in low flame for 3-4 mins.. add a hand full of chopped coriander leaves to the pan..

* Heat a pan with Oil and temper it with mustard, Fenugreek, Red chillie and Curry Leaves… add the tempered item to the sambar..

All done and ready to serve…

Cucumber Sambar

Ingredients:
Cucumber- 1 cup chopped
Medium sized onion 1
Thoor dhal- 1/2 cup
Pearl onion- 1/4 cup
Garlic pods- 3-4
Hing- 1/2 tsp
Sambar Powder- 1 tsp
Turmeric powder- 1/4 tsp
Salt- as per taste
Tomato- 1
Tamarind paste- 1/2 tsp
Coriander leaves- 2-3 springs

To Temper:
Oil- 1 tsp
Mustard- 1/2 tsp
Methi/Fenugreek seeds- 1/4 tsp
Red chillie- 2-3
Curry Leaves-1 spring

Method:
* Boil the Thoor dhal with Pearl onion, garlic and Hing… pressure cook it for 3-4 whistles, mash well and set aside..
* Cube the cucumber and onion… boil it with 2 cups of water..
* Add in chopped tomatoes and tamarind to the pan..
* Add in the Sambar powder and turmeric powder to the pan…
* Add in the mashed dhal to it.. put in low flame cook this for 4-5 mins.. add in the chopped coriander leaves to it..
* Heat a kadai with oil and Temper with Mustard, methi, red chillie, and curry leaves.. add the tempered items to the Cucumber sambar..
