Garlic Drumstick Curry/ Poondu Murungaikaai Theyal

Garlic Drumstick Curry/ Poondu Murungaikaai Theyal, Garlic and drumstick cooked in roasted coconut masala with tamarind water.. this tangy, spicy, curry is soooo yummy with steamed rice, we pair this with Idli Dosa too..
We prefer this curry in every 10 days.. and we do in brinjal too, theyal is a traditional curry of Kerala.. vegetables cooked in Roasted coconut masala.. this can be paired with any kind of poriyal , Garlic had lot of health benefits, garlic helps in digestion.. the best mouth watering pair with this curry is potato Fry..Here we go with the preparation..

Garlic Drumstick Curry/ Poondu Murungaikaai Theyal

 Prep Time: 30 mins  |  Cook time: 30 mins    |  Serves: 2

Ingredients

Garlic 1/4 cup
Pearl Onion 10-12 nos
Drumstick 1
Tomato 1-2
Tamarind Water 1 cup
Oil 5-6 tsp
Mustard 1/2 tsp
Fenugreek seeds/Methi 1/4 tsp

Roast and Grind

Coconut 1/4 cup
Onion 5-6 nos
Garlic 6-8 pods
Pepper 1/2 tsp
Jeera 1 tsp
Fenugreek/Methi 1/4 tsp
Curry Leaf 1 spring
Chilli powder 1 tsp
Coriander Powder 1 tsp
Turmeric Powder 1/4 tsp
Sambar Powder 1 tsp

   Method

   1. Take all the ingredients in the second table and roast it for 5-6 mins in medium flame.. set them aside and make it cool..

   2. Add in some water and grind it to a smooth paste… here is the other ingredients for the curry..
   3. Heat a kadai with oil temper it with mustard, fenugreek seeds, sauté the sliced onion, curry leaves and garlic to the Pan and sauté till they turn golden brown in color or till the garlic turns soft..
   4. Add in the Drumstick and tomatoes to it, and sauté it for few minutes..
   5. Add in the grinded paste to it, add in the tamarind water, salt and bring this boil for few mins in medium flame.. or till the oil separates..

   Notes

    • Roast the ingredients carefully, make sure not to burn.
    • Grind them to a smooth buttery paste
    • Adjust taste to your taste buds by adding tamarind water, salt and spices..
    • If you use kulambu masala powder then skip the chill powder and coriander powder and add it..
    • Add generous amount of oil to cook the garlic.. prefer gingerly oil for good taste..
