 Aviyal, Traditional recipe of Kerala.. my mom do the best in this, aviyal kootu is a combination of mixed vegetables, cooked with coconut masala.. this is a kerala based recipe… our native is close to kerala, so most of the recipe will have a kerala touch, this is one of the method which i prepare, i slightly change the recipe to my tasteTongue

Mom usually grind the masala first, mix all the masala, vegetables, salt, together with some water, she start cook in medium flame till the water dries up and the vegetables got cooked, finally temper with some coconut oil.. this is one method, some use tomato, mango, curd for Aviyal, already i had a version of curd, this method is the regular which we prepare with most comfort… and this kootu is a best combination with all types of curry like sambar, rasam, Puli kootu, Paruppu curry.. even it goes well with all nonveg curry too… This time i prepare this for Our Breakfast.. Adai and Aviyal is a best combination of Brahamin recipe.. i never think the aviyal without drumstick, brinjal and rasa banana.. only these three vegetables stays very tasty.. From Poor to rich this kottu will present in all plates of their functions… if they arrange for a south indian vegetarian meal, this will not miss.. filling kootu.. i remember one of my friend bring only this kootu for rice without any curry.. such a delicious and simple yet rich combination with steamed rice… I hope this post will help to learn this traditional recipeTongue..



Prep Time: 20 mins    |  Cook time: 30 mins    |  Serves: 4


Carrot 1 nos
Drumstick 1 nos
Brinjal 1 nos
Raw banana 1 nos
Beans 3 nos
Cucumber 1/2 piece
Pearl Onion 1/4 cup
Coconut Oil 4-5 tsp
Mustard 1/2 tsp
Urad dhal 1/2 tsp
Curry Leaves 1 spring
Salt as per taste
Tamarind paste 1/2 tsp


Coconut 1/4 cup
Jeera 1 tsp
Pearl onion 5-6 nos
Curry Leaves 1 spring
 Green chillie 3-4 nos
Garlic 2 pods



 1. Take all your vegetables, wash them and peel the skin.. evenly make pieces as i did..

 2. In the mean time take all the ingredients which need to grind in a mixer.. without adding water grind them coarsely..

 3. Heat the kadai with oil, temper with mustard, urad dhal, onion and curry leaves.. add in the chopped vegetables.., add Turmeric powder and salt.. mix them well.. cover with a proper lid and let them sit in medium flame for 5-8 mins..

 4. The vegetables will half cooked in this stage.. now add the masala, and mix them well, add in the tamarind paste to it..

  5.Mix them well cover and cook this for another 5- 8 mins in medium flame.. once they done drop some coconut oil on the top and add a spring of curry leaves to it.. and cover with the lid..

    • Evenly cut the vegetables for a good look..
    • Can use potatoes, also you can any vegetables of your choice too…
    • Grind the masala without adding any water.. don’t grind smoothly..
    • Cooking in medium flame is recommended..
    • Adjust the spice level in green chillie..
    • Dont stir vigorously, all the vegetables will mash up together..
    • You can add tamarind water instead of tamarind paste..
