Mango Coconut Cake, Soft Pudding kind of cake.. One Piece is more than enough to finish a cup of hot coffee or tea, Fresh flavours from cake is nostalgic and fresh treat to every one in the home..
Fresh coconut taste crunchy between and taste awe like anything.. This time i had few fresh mango from my Cousin, Those mangoes are really good in taste.. i don’t want to use them for regular way, and planned for this yummy cake.. quite new experience with mango in baking.. Mango Coconut Cake

Prep Time: 10 ins | Cook time: 30 mins | Temperature: 180C
Preheat the oven for 10 mins in 180C, Sieve the Flour, baking powder and baking soda and keep them aside
Peel the mango, chop them add them to the mixer puree the mango
Here comes the super ingredients, grated fresh coconut
Bring the Butter to room temperature, or microwave it for 30 seconds or Double boil the bowl to melt the butter
Beat the Egg and Whisk them finely, Add the Eggs one by one for better result.
Now the turn for the second Egg, crack them and whisk along with the mix..
Once the Egg and Butter get mixed well and fluffed up, add the sugar and mix them nicely to dissolve the sugar..
Add the mango puree and Mix them well
Now take out Whisker and use the spatula, Add the sieved four mix and gently fold the batter..
Once the batter get folded well add the coconut and mix them
Grease the baking pan with Oil or butter and transfer the batter to the pan.. Top them with Cashew nut, Put them into the Preheated oven, Bake this for 30 mins in 180C
Once done poke a tooth pick inside the Cake and check the cake is cooked or not.. if not again put them back into the oven and bake for few more mins
- Use Fresh coconut and fresh mango puree, adding Canned Mango puree and Desiccated coconut may vary in taste.
- Make sure all the ingredients are in room temperature
