 Honey Cake, Family’s most favourite cake.. Where ever Joe saw this in Bakery he will buy a box of cake.. i know that he loves Honey cake.. but when i said I’m going to try this cake.. he said a big No for it..

Final result was so good than i expected.. finally i got the pass mark form Joe for this Cake.. Few weeks before Saw this recipe was uploaded Vidya akka in Youtube.. Seriously I’m impressed a lot to try this cake.. should give thank to Vidya akka for a fabulous recipe.. Also before going with procedure i was thinking this was dumped with honey, i didn’t find any trace of honey in it, and ask her about this, she explained nicely.. as this cake will kept in Bakery’s for 2-3 days.. they use Fruit jam for it’s Shelf life.. and the its damn good in taste.. Jess Relished with this cake.. and this recipe makes to feel fly again to make me proud myself as a home baker.. Ingredients

APF/Madia 1 cup
Egg 2 nos
Sugar 3/4 cup
Oil/Butter 1/2 cup
Baking Powder 1/2 tsp
Baking Soda 1/2 tsp
Vanilla Extract 1 tsp

Ingredients for topping & Syrup

Mixed Fruit Jam 1/2 cup & 3-4 tsp
Water 2.5 cups
Coconut Powder  1 cup

 

Method

Crack the eggs in a mixing bowl, in the mean time preheat the oven to 10 mins @ 180 C

Beat the Egg well, till they fluff up, add in the sugar and beat them again..

Once the sugar got melted add in the oil.. and mix them well..

Add the sieved Dry Mix(APF/Maida, Baking Powder, Baking Soda)

Fold the dry mix well to a batter, i forget to add the Vanilla extract earlier, so i added here..

Transfer the batter to the greased pan..

Bake the cake for 30 mins @ 180 C .. or till they done..

Once the cake get cooled.. Remove the cake and again set them back the tray.. this for comfortable use.. Poke the cake using a forks..

Heat the water in a bowl or in a sauce pan..

Add the 1/2 cup of jam to the water..

Bring this to boil.. the jam will melt and start to boil well..

Reduce the syrup quantity to the original level..

Bring the syrup to normal temperature

After poking the cake, Slice the cakes and set aside..

Slowly Drop the Syrup to the cake bed.. wet them well.. don’t panic, cake absorbs all the syrup.. if you found some syrup floats on top, set aside for few mins.. all get absorbed..

Remove the slices one by one and roll the cakes in the coconut powder, leaving the top side and roll coconut powder to all the other sides..

In the meantime, Take rest of the jam add few tsp of water, double boil till they melt, or microwave it for 30 seconds.. mis them well

Fill the Top with Mixed jam, Spread evenly

Once all done put them back to the tray and refrigerate for few mins and serve..

Notes

  • To reduce your work you can use a ready packed cake mix.
  • i have no idea in store bought cake for this preparation, if you try, please let me know your result.. 
  • There is no honey used in this cake, but loaded with a good amount of fruit jam..
