Brinjal Rice/Vangi Bath, Dont know from when i started to love brinjal, this will not miss in my vegetable shopping list, how ever and what ever cook with brinjal will taste too good..
Brinjal had lot of vitamins, mainly this sis pack of folic(Iorn), Brinjal had a unique taste, mostly this is not a kids friendly vegetable.. Brinjal is a substitute for Fish, this is similarly called as vegetarian fish, when ever i feels like to have Fish in non season, will fry or cook brinjal to relish the meal.. Also Brinjal will Allergic to some people.. even joe was in the list, but regular consume of brinjal change the habit.. Hope this post helps you..Day 51 of B365

Brinjal Rice/Vangi Bath

Ingredients
Cooked Rice | 2 cups |
Brinjal | 4-5 nos |
Oil | 2 tsp |
Jeera | 1/2 tsp |
Channa Dhal | 1/2 tsp |
Onion | 1 nos |
Green Chilly | 2-3 nos |
Tomato | 2 nos |
Tamarind Water | 3 tsp |
Vangi Bath Masala | 2 tsp |
Salt | to taste |
Coriander Leaves | 2-3 springs |
Method
Wash and dry the brinjal using a kitchen towel

Slit them and set aside, drop them in Water to avoid de-coloring

Heat a pan with oil, Temper with Jeera..

Add in the Channa dhal, Fry the Sliced Onion, till they turn translucent..

Add in the Slitted green chillies, and tomatoes the pan, cook them till the tomatoes mashed out..

Add in the Chopped Brinjal, Sprinkle some salt mix them well and cover the pan with a lid..

Cook the Brinjal till they turns soft..

Add in the tamarind water..

Followed by Vangi Bath masala, and turmeric powder.. mix them well, Allow this cook till masala blends with the the Brinjal..

Add the cooked rice to the masala

Slowly mix the rice with the masala..

All done..

Sprinkle some Coriander Leaves and serve..
