 A unique gravy from Kerala, Which plays a good role with Appam and Idiyappam.. Taste of this curry with the combination are like heaven, this is absolute combo with Idiayyapam, very long back we had this combo in Church festival..
Cant explain those flavour and taste in words, this is a must try recipe for appam/Idiyappam.. Can adjust the vegetables and spices to your taste, main ingredients which should not miss in this curry are, Green peas, Potato, and Cauliflower.. Few people add tomato to this curry, i don’t have any idea on it.. Vegetable Stew

Prep Time: 6 hours | Cook time: 30-40 mins | Serves: 3-4 

Ingredients

Vegetable(Carrot,Beans,Cauliflower, Potato) 1.5 cups
Green Peas 1/2 cup
Thick Coconut milk 1 cup
Thin Coconut milk 1.5 cups
Oil 2 tsp
Fennel Seeds 1/2 tsp
Cloves 2 nos
Cinnamon 1 inch
Onion 1 large
Green Chilly 2 nos
Curry Leaves 2 spring
Ginger Garlic Paste 2 tsp
Graham Masala 1/2 tsp
Salt to taste
Coriander Leaves 2 spring

 

Method

Wash and clean the vegetable, chop them into pieces and soak them in salted water.. i used 1 carrot, 3-4 beans, 2 board beans, 1 pc of cauliflower, 1 potato)

Soak the green peas for 6 hours or soak it for over night, pressure cook this for 2-3 whistles and set aside..

Thin Coconut milk.

Heat a pan with oil, temper with Fennel seeds, Cinnamon, Cloves.. wait until they pop up.. nice aroma will raise.

Salute the onion, Green chilly, curry leaves.. (Sorry my curry leaves are dried)

Once onion turns tansulent, Add all the chopped vegetable, Ginger garlic paste and boiled green peas.. saute them well, allow this to cook for 5-8 mins in medium flame, cover the pan with a lid and cook the vegetables..

Add Graham masala, pepper powder, salt and give a good stir..

Add in the Green peas boiled water, thin coconut milk, again cover and cook the vegetables..

Boil them well, again cover the pan with a lid and allow the thin coconut milk to dries up..

Here you see, how the vegetables are cooked well, they soft enough for the stew..

 And the final step, add in the thick coconut milk and boil this for 3-4 mins, ad some coriander leaves for garnishing and serve this with Appam, Idiyappam, Idli too..

Notes

    • Add green chilly and pepper powder to your taste bud, 2 green chilly and 1 tsp of pepper powder are good enough for us.. 
    • Cook the vegetables in Thin coconut milk.. 
    • Cook vegetables to tender soft..
