Happy New Year to all, I’m Late to admit myself here, thought of posting a sweet recipe, that makes the delay and that was delaying to the extent, so to make a stop on it, i was with our staple ingredient Fish.. Hope you all had a great start with “2017”, i was over excited to start my new year with XL family, Heard so many good news after new year.. Okay lets move onto todays recipe..
Anchovies Fritters, a Recent additon to our regular menu absolutely this is my MIL’s recipe.. couple of years back they were in Tutucorin for few days, there one of her neighbour shared this yummiest recipe, I’m crazy over this fish.. this kind of fritters are ready to eat in anytime here..
To be honest there was few attempt with the same recipe earlier, where i noted through phone and ended with ultra flop.. To the other end i love this crispiest fish, when my MIL was here i asked her to explain, she was giving direction and i was in the mission to execute, there she found my mistake, yes i added more water to mix the masala, have pointed down clearly with my know details, Please go through with the recipe instruction and note.. Hope my Post will give a proper guide about the recipe, DO try and let me know how it was..
Anchovies Fritters/Netholli Meen Varuval

Prep Time: 30 Mins | Cook time: 15 mins | Serves: 2-3
Wash and clean the fish, should remove the head and tails, clean the fish in running water.. drain all the excess water, if possible slightly squeeze out excess water..
Add Chilli Powder, Coriander Powder, Turmeric Powder and Jeera Powder, no need to add extra water, if need use a spoon to add water, spread the masala all over the fish, use your hands for mixing, so that masala can be spread evenly..
Add required salt and corn flour, here though mix the flour but don’t add water, if need use spoon to sprinkle water.. mix well to coat the corn flour all over the fish..

Separate the fishes in a plate to give deep marination..
Refrigerate the fish for marination, keep them for minimum 30 mins.
Once done, Heat a kadai with oil drop the fishes one by one into the hot oil, flip them and cook till they done
Repeat the batches, and finally for garnishing fry a hand full of curry leaf and add to the fish, this is completely optional, thats why i didn’t include in step demo..
- Do not add more water to mix the masala, should be very careful in adding water to mix the masala with fish, if water is more, while frying oil will splash every where and fritters will be more oily..
- Adding more corn flour will be crispier to the fritter, here i added corn flour to just coat the fish..
- For variations you can Lime juice, ginger Garlic paste, Fennel powder, Pepper Powder, for different flavour and taste, here i followed a very simple method which should be easy for every readers, even the jeera powder was my addition, if you don’t have in your pantry then don’t mind quit it, mainly you need hotness from chill powder and the crispness from Cron flour..
