Prawn Fried Rice

Prawn Fried Rice, First time we order this in Fisherman Wharf Restaurant in Bangalore, That was my birthday Celebration in Fisherman wharf.. since i loved Seafood Joe take me there for a seafood shower.. that was a lovely experience with Joe and Jess 

This special prawn fried rice is perfect one pot meal, best for a party menu.. Love to have this bowl of rice at any time.. Prawn Fried Rice

Ingredients

Basmathi Rice 1 cup
Prawn 1/4 kg
Egg 3 nos
Oil 4-5 tsp
Ghee 2 tsp
Onion 1/2 cup finely chopped
Ginger Garlic Paste 2 tsp
Carrot 1/4 cup finely chopped
Beans 1/4 cup finely chopped
Pepper Powder 1 tsp
Salt as per taste
Coriander Leaves 3-4 spring finely chopped

 

Method

 1. Wash and clean the prawn, peel them and devein the prawns, add some turmeric powder, salt and a cup of water, boil it and cook till the water get dries up..

 2. Wash and clean the Basmathi Rice, Pressure cook it for 2 whistles with some salt, I added 1:2 ratio of rice:water.. Wait until the pressure release, Spread the rice in plate, drizzle some oil, use your forks to flufup…
 3. Heat a pan with 2 tsp of oil, Crack the eggs and add some salt and fry them, scramble the egg and set aside..
4. Heat a quad with oil+Ghee, Saute the onion, till they turns translucent, add in the ginger garlic paste…
 5. Add in the chopped Carrots and beans to it, salute it for few mins in medium flame.. add the boiled prawn to the pan.. 
 6. Add in the scrambled egg and  mix well, now add the boiled rice and mix them carefully without breaking the rice..
  7. Add pepper and salt and mix well, garnish with coriander leaves…

Notes

  •  I used 1:2 ratio for Rice and water, (Rice:Water)
  • I used Freshly crushed Ginger and Garlic, that gives the fantastic flavor for the pulav
  • Scrambling eggs separately is not so necessary, you can break the eggs once the vegetable get fired and scramble together..
  • If you use big Prawns, then chop it into pieces, For the Small Prawn to you can chop.
