Coconut bun

Coconut bun, This reminds my childhood day, we used to addict for this coconut bun, in home town we buy a big sized coconut bun, which is hard enough to fill the tea time for the whole family, nowadays this is available in all kind of Local bakery’s too.

This recipe is not the same one for soft puffy buns, i need a thick crusty outside.. and i got the good end with this recipe.. you can skip the food colour, and can add few more dry fruits and nuts of your choice too.. earlier i use to eat the centre part, i won’t have the edge part, that’s in childhood rite, now i love the whole bread.. this is a absolute match with a cup of hot tea, to fill the tummy.. you can brush the top with egg white for a more darker version of it.. I have few more variations in this kind of recipe will post them in coming days.. This is my Day 44 of B365..

Coconut Bun

Maida/APF 2 cups
Yeast 1 tsp
Sugar 1 tsp
Salt to taste
Warm Water 1/4 cup
Milk 1/2 cup
Oil 1/4 cup


Ingredients For Stuffing

Ghee 2 tsp
Coconut 1/4 cup
Sugar 4-5 tsp
Orange Food Colour a pinch
Cashew nuts 2 tsp
Raisins 2 tsp
Tutti- Frutti 2 tsp


Take the warm water in a bowl, add sugar and yeast to it.. keep them aside for 15 mins.. 
After 15 mins, you can see the yeast will foam up, if then the yeast is proved 
Take the flour, Salt in a mixing bow, add the yeast to it.. 
Add the milk to the mixing bowl
Knead well by adding any water if needed.. Knead to a soft dough.. 
Spread some oil over the top and keep them in a warm place, the dough will proved and raise to double in size.. 
Heat a pan with ghee, Fry the cashew nuts in it.. 
Add int he raisins and cook for a while.. 
Add a pinch of food color and mix them well
Now add int eh fresh grated coconut.. and mix them well. 
Add in the sugar and wait for 3-4 mins, to melt the sugar.. no need to melt the sugar completely 
Finally add the tutti fruity and switch off the flame.. 
Grace the baking pan with ghee, and preheat the oven for 10 mins in 180C
Spread a ball of dough in the base.. 
Place the Stuffing inside the Pan.. by leaving the edges.. 
again roll a ball of dough and spread over the filing.. 
Cover the edges with the remaining dough.. (You can keep this aside for 30mins to 1 hour to raise the dough, i didn’t do in this recipe, so i got a thick flat bread, if keep them aside to raise the dough, then you can see a soft puffy bun.. )
Carefully make dots over the dough.. 
Spread some ghee or butter to the top for brushing.. 
Bake them for 20 mins, or bake till the top turns brown in color.. 
Bring the bread to the room temperature and serve with a cup of hot tea
