Beetroot pulao


Beetroots are very good vegetable to health, which had many more beneficial character in it.. but how long having the same beetroot poriyal, thooran, raita.. why not step on to other taste.. usually beetroots had root smell in it, in beetroot rice recipe, i used some spices and masala’s to over come the smell.. but here i used my biryani procedure and completely this was a yum yum platter, serve with some raita, salads. this will be the great one.. i always face the challenge of feeding vegetable to Jess, Some time using these kind of techniques, i’ll be happy for him.. okay here you go with the recipe.. Beetroot Pulao

Ingredients
Basmathi Rice | 2 cups |
Beetroot | 1 nos |
Ghee/Oil | 3 tsp |
Fennel Seeds/Perunjeeragam | 1/2 tsp |
Cardamon | 2 nos |
Cinnamon | 1 inch |
Bay Leaf | 1 leaf |
Cloves | 2 nos |
Onion | 1 large |
Tomato | 1 nos |
Green chilli | 2 nos |
Ginger Garlic paste | 1/2 tsp |
Chillie powder | 1/2 tsp |
Coriander Powder | 1/2 tsp |
Turmeric powder | 1/4 tsp |
Garam masala | 1/2 tsp |
Salt | as needed |
To Grind
Tomato | 1 nos |
Green chilli | 1 nos |
Coriander Leaves | a hand full |
Mint Leaves | a hand full |
Method
1. Take all the ingredients to grind in a mixer and grind it, soak the basmati rice for 10 mins..

2. Chop the Beetroots into bit size pieces, Heat the pressure cooker with ghee/Oil, temper with Fennel seeds/Perrunjeeragam, Cinnamon, Clove, Cardamon.. let them pop up..

3. Add int he chopped onions and green chillies, (since i used 2 chillies here, and used a chilli to grind and added some chilli powder too my pulao was bit spicy, if you wish skip the chilies here), Add in the Ginger garlic paste and fry for few mins..

4. Add in the tomatoes and cook till they turn mushy, Add in the grinded paste and cook till they oozes the oil.

5. Add in Chillie powder, Coriander powder, Garam masala, Turmeric Powder, Mix them well, Add in the Chopped beetroots mix them well ad cook this for 3-4 mins in medium flame..

6. Now add int he Soaked rice and Add water In ratio (1:2 is the ratio i used here, i.e., for 1 cup rice i used 2 cups of water)..

7. Bring this to boil and add in the salt, cover this with the pressure cooker lid, keep this for 2 whistles, wait until the pressure realised.. poke with forks and serve..

Notes
- This is a bit spicy pulao, i should mention here, i used 2 green chillies for saluting, and 1 green to grind and 1/2 tsp of chilli powder to the grave part, so adjust the spice to your taste level..
- can use some Coconut milk, and 2 tsp of curd too vary some taste..
