Egg Bajji, These bajji’s are Tea Kadai special in K.K district. This recipe and the post brings my childhood memories back to my eyes. The crispy edges and stuffed egg are totally a yum while biting this bajji with a cup of chai.
Egg Bajji recipe is about deep fried boiled eggs coated with Besan batter. A perfect heavy snack for a fussy evening tea time. Adding pepper and salt brings a exotic flavour to the bajji’s. Eggs are very versatile Ingredient. I can’t imagine my pantry without Eggs, they saves the morning hurry time like a Pro. Choosing the right eggs are very important. There are so many Egg varieties in Market, Brown eggs or Nattu Kozhi eggs are too good and nutritious. Here this recipe covers a healthy kids friendly share.

Peel the boiled eggs
Cut them into Half
Sprinkle Pepper and salt
Take a bowl with Besan flour, chilli powder, hing, Salt and Baking soda.
Little by little add enough water and mix the besan flour to make bajji mix.
Place the Eggs upside down to the batter, without disturbing the pepper and salt dip the eggs into the batter.
Drop them in hot oil
flip and cook both the side of the bajji till they turns crisp.
Drain the bajji’s in a kitchen towel or in a colander.
- The consistency of the batter should be similar to the dosa batter, if the batter is too thin then batter will not stick to the Eggs.
- Serve this bajji with coconut chutney or with Tomato Ketchup.
